	A creamy, rich, non-dairy version of the traditional alfredo sauce made with all whole food ingredients! This sauce is paleo and vegan friendly.

	Yield: 3 cups
</p>

</p>

	<li>1 head cauliflower, steamed</li>
	<li>1 cup cashews (soaked for at least 1 hour, *discard water)</li>
	<li>1 cup nut milk (almond or hemp work well)</li>
	<li>½ cup nutritional yeast</li>
	<li>1tsp kelp (or sea salt)</li>
	<li>½ tsp pepper</li>
	<li>2 tbsp lemon juice</li>
	<li>1 tbsp coconut oil (for cooking)</li>
	<li>1 medium onion</li>
	<li>3 cloves garlic, minced</li>
</ul>
<p>
	<strong>DIRECTIONS</strong>
</p>
<ol>
	<li>Chop cauliflower into rough pieces, steam until tender.</li>
	<li>Heat coconut oil in a pan. Sweat onions and garlic for 2-3 minutes or until translucent.</li>
	<li>Add all ingredients in a high speed blender or food processor. Blend/mix until creamy.</li>
	<li>May tossed into a large pan with zucchini to heat before serving.</li>
	<li>This sauce can be used on any pasta noodle; I used spiralized zucchini for this version. ENJOY!&nbsp;</li>

	Quadruple Seed Peanut Butter Coconut Truffles are a great dessert choice without any added sugar. Experiment in using some of these ingredients in your cupcakes and cakes!

	Serves: 15<br>
	<br>
	1 cup unsweetened chocolate coconut milk beverage (regular would work also)<br>
	12 medjool dates, pitted<br>
	1/2 cup smooth natural, unsalted peanut butter<br>
	1/2 cup natural, unsweetened cocoa powder<br>
	1/2 cup chia seeds<br>
	1/2 vanilla bean, split lengthwise<br>
	1/2 cup unhulled sesame seeds<br>
	1/2 cup hemp seeds<br>
	1/2 cup raw sunflower seeds<br>
	1 cup chopped unsweetened dried cherries<br>
	1 tablespoon fresh orange zest (use an organic orange)<br>
	1/4 cup coconut flour<br>
	additional coconut flour or ground nuts<br>

	In a blender, combine the coconut milk, dates, peanut butter, cocoa powder and chia seeds. Blend until smooth and set aside.<br>
	<br>
	Scrape seeds from vanilla bean pod with a dull knife. In a large bowl, combine vanilla seeds, sesame seeds, hemp seeds, sunflower seeds, dried cherries, orange zest and coconut flour. Stir in the blended date mixture.<br>
	<br>
	Using your hands, form a big ball and then create smaller truffle-sized balls by rolling about 1 tablespoon of the dough in the palm of your hands.<br>
	<br>
	If desired, roll balls in coconut flour and/or ground nuts. Makes approximately 30 bite-sized truffles.

	Quadruple Seed Peanut Butter Coconut Truffles are a great dessert choice without any added sugar. Experiment in using some of these ingredients in your cupcakes and cakes!
</p>
<p>
	Serves: 15<br>
	<br>
	1 cup unsweetened chocolate coconut milk beverage (regular would work also)<br>
	12 medjool dates, pitted<br>
	1/2 cup smooth natural, unsalted peanut butter<br>
	1/2 cup natural, unsweetened cocoa powder<br>
	1/2 cup chia seeds<br>
	1/2 vanilla bean, split lengthwise<br>
	1/2 cup unhulled sesame seeds<br>
	1/2 cup hemp seeds<br>
	1/2 cup raw sunflower seeds<br>
	1 cup chopped unsweetened dried cherries<br>
	1 tablespoon fresh orange zest (use an organic orange)<br>
	1/4 cup coconut flour<br>
	additional coconut flour or ground nuts<br>

	<br>
	In a blender, combine the coconut milk, dates, peanut butter, cocoa powder and chia seeds. Blend until smooth and set aside.<br>
	<br>
	Scrape seeds from vanilla bean pod with a dull knife. In a large bowl, combine vanilla seeds, sesame seeds, hemp seeds, sunflower seeds, dried cherries, orange zest and coconut flour. Stir in the blended date mixture.<br>
	<br>
	Using your hands, form a big ball and then create smaller truffle-sized balls by rolling about 1 tablespoon of the dough in the palm of your hands.<br>
	<br>
	If desired, roll balls in coconut flour and/or ground nuts. Makes approximately 30 bite-sized truffles.
